I am using the "sky-blue" colour theme, i'd like to change the colour of this background image to something else, is it possible?

Do you mean the icon over the portfolio item? You can change it by 'Thumbnail Icon' option in each single page.

You can replace the image in 'colors/skyblue' folders.
